Mayo Marinated Chicken Burrito Bowl

Ingredients

Mayo Chicken

  • 4 thighs
  • 2 T mayo
  • 4 cloves garlic
  • 1 lime's zest and juice
  • chili powder
  • marjoram
  • salt

Bowl

  • Rice
  • Black Beans
  • Hot Sauce
  • Lettuce
  • Roma tomato
  • Cilantro
  • Cotija / Crema
  • Pickled red onions

To serve

Pairs very well with elote and the crema from the elote.

Instructions

  1. Step 1

    If eating with elote, begin preheating oven to 400F and baking corn. If making beans, begin cooking the beans in Instant Pot. Both of these take ~1hr. Pickle red onion if necessary.

  2. Step 2

    Begin cooking rice. Prep cilantro. Wash lettuce and tomato.

  3. Step 3

    Mix mayo and spices in a bowl. Add chicken and slather in marinade. Can cook immediately, or marinate for a few hours. Begin preheating cast-iron pan over medium heat.

  4. Step 4

    Cook chicken. Can slice immediately without letting rest.

  5. Step 5

    Prepare bowls in order listed in ingredients: rice, beans, chicken, hot sauce, lettuce (shredded), tomato, cilantro, cotija and/or crema, pickled red onion.
